INGREDIENTS
1 portion of glass noodles
90g tofu
1 cup soy milk
1 tablespoon peanut butter
½ boiled egg
1 tablespoon chopped cucumber
1 teaspoon fried onion
Sliced radish, for garnish
Sesame seeds, for garnish
Salt and/or sugar to taste
4-5 ice cubes
METHOD
1. Prepare the tofu-peanut sauce:
In a food processor, blend together the tofu, soy milk, and peanut butter until the mixture is silky smooth. Adjust the seasoning by adding salt and/or sugar to taste. Once blended, place the sauce in the refrigerator to cool.
2. Cook the glass noodles:
While the sauce chills, cook the glass noodles according to the package instructions. Once done, rinse the noodles under cold running water to stop the cooking process and cool them down.
3. Assemble the dish:
Take a bowl and arrange the cooled glass noodles in the centre.
Pour the chilled tofu-peanut sauce around the noodles, creating a creamy base.
Add 4-5 ice cubes, submerging them into the sauce to keep the dish extra cool and refreshing.
4. Garnish and serve:
Arrange the chopped cucumber, half of a boiled egg, fried onions, and sliced radish on top of the noodles.
Sprinkle with sesame seeds for added texture and flavour.
Serve immediately and enjoy this chilled, creamy, and nutty noodle dish as a refreshing meal or snack.
