Spanakopita Cookies
A savory little twist inspired by classic spanakopita — soft, cheesy cookies filled with spinach, feta, dill, and sweet onion. Crispy on the outside, tender in the middle, and perfect for snacking, brunch, or sharing.
Ingredients
- 1 egg
- 4 tbsp olive oil
- 50 g Greek yogurt
- 45 g baby spinach, finely chopped
- 1 tbsp chopped dill
- 1 tbsp chopped sweet onion
- Salt & black pepper
- 110 g feta cheese
- 35 g shredded mozzarella
- 125 g self-rising flour
Method
Preheat the oven to 180°C and line a baking tray with parchment paper.
In a bowl, whisk together the egg, olive oil, and Greek yogurt until smooth.
Add the chopped spinach, dill, sweet onion, salt, black pepper, crumbled feta, and shredded mozzarella. Mix until combined.
Sift in the self-rising flour and gently stir until a soft dough forms.
Using your hands or a spoon, form small balls and place them onto the prepared baking tray. Press them down slightly.
Bake for 17–20 minutes, until lightly golden on the outside.
Let cool slightly before serving.
