Green Waffles with Whipped Goat Cheese & Apple

Soft, vibrant and lightly sweet — a playful way to bring something green, fresh and a little unexpected to your table.

Ingredients

For the waffles

300 g all-purpose flour
250 ml milk
130 g butter
100 g sugar
3 large eggs
1.5 teaspoon vanilla sugar
1 teaspoon baking powder
2 handfuls baby spinach
2 tablespoons water

For topping

100 g soft goat cheese
1–2 tablespoons cream or Greek yogurt
1 green apple
A squeeze of lemon juice
Lime zest


Method

Melt the butter and let it cool slightly.

In a large bowl, beat the eggs with sugar and vanilla sugar until pale, fluffy and increased in volume.

Add melted butter and milk. Gently mix until combined.

In a separate bowl, mix flour with baking powder. Sift into the wet mixture and stir until smooth.

Blend spinach with water until completely smooth. Add to the batter and mix well.

Preheat the waffle maker and cook until golden and cooked through.

In a small bowl, whip goat cheese with cream or yogurt until smooth and airy.

Thinly slice the apple and toss with a little lemon juice.

Serve waffles topped with whipped goat cheese, apple slices and a light sprinkle of lime zest.
