Pea Shoot & Raspberry Gazpacho
Sometimes the most surprising flavor pairings are the ones that linger longest. Sweet raspberries meet crisp cucumber and earthy pea shoots in this light, refreshing gazpacho — balanced with just a hint of chili heat and a splash of vinegar for brightness. It’s smooth, tangy, and playful on the palate, with garnishes that let you dress it up however you like: a drizzle of olive oil, a scatter of pistachios, or simply a few extra raspberries on top. It’s the kind of dish that feels both elegant and effortless, perfect for when you want something unexpected yet deeply satisfying.
