Watermelon Radish with Miso Ginger Vinaigrette
This is one of those dishes that feels almost too pretty to eat — delicate slices, soft color, and just enough flavor to surprise you. It’s light, fresh, and quietly bold, with that perfect balance of sweet, salty, and a little bit of heat from the ginger.

Ingredients
- 1 watermelon radish
- 1 tsp miso paste
- 1 tsp grated ginger
- 1 tsp honey
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp olive oil
- Pinch of salt and black pepper
- 1 tbsp chopped spring onion
- 1 tsp sesame seeds
Method
Using a mandolin, slice the watermelon radish into very thin, even rounds.
In a small bowl, whisk together the miso paste, grated ginger, honey, rice vinegar, sesame oil, salt, pepper, and olive oil until smooth and glossy.
Arrange the radish slices on a serving plate, slightly overlapping for a layered look.
Sprinkle over the chopped spring onions.
Drizzle the miso ginger vinaigrette evenly over the top, letting it settle into the layers.
Finish with a sprinkle of sesame seeds and serve immediately.
