INGREDIENTS

1 cucumber
1 red bell pepper
100g of salted salmon fillet
6 sticks of artificial crab meat (surimi)
6 square sheets of nori
100g of cream cheese
150g of sushi (or sticky) rice
1 tablespoon of rice vinegar
6 teaspoons of sesame seeds

METHOD

1. Begin by boiling the rice as per the instructions on the package. Once cooked, let it cool slightly, and then mix in a tablespoon of rice vinegar, infusing it with a subtle tanginess.

2. Prepare the vegetables: Trim the cucumber ends and cut it in half lengthwise. Use a spoon to remove the seeds from each half. Then, cut each half into thin, long strips. Similarly, cut the red bell pepper into strips, creating a colourful contrast for your Gimbap.

3. For the filling: Shred the surimi into thin strips, ensuring an even distribution in each roll. Cut the salted salmon fillet into strips as well, adding a savoury and oceanic element to your rolls.

4. Assembly time: Lay out your Gimbap or sushi rolling mat on a clean work surface. Place one sheet of nori on top of it. Take a portion of rice and evenly spread it across the seaweed sheet, leaving about one or two inches at the top edge. To help with sealing, dot a few rice grains along the top edge.

5. A creamy twist: Spread a tablespoon of cream cheese in the centre of the rice, adding a rich and velvety touch to your Gimbap. A sprinkle of sesame seeds on top will infuse each bite with a delightful crunch.

6. It’s filling time: Arrange your cucumber, red bell pepper, surimi, and salmon strips across the centre of the rice. Make sure to divide your fillings equally for each seaweed sheet.

7. Roll it up: Now comes the fun part. Roll the bamboo mat away from you, gently curling the seaweed sheet and rice around the fillings. Use your fingers to hold the fillings in place as you roll with your thumbs. Seal the roll with the exposed flap of seaweed sheet. A gentle squeeze will compress the roll slightly and secure the edge. If it doesn’t seal well, you can also wet the seaweed at the seam to help it adhere.

8. Repeat and slice: Continue this process with the remaining seaweed sheets, rice, and fillings. Once you have your rolls, use a sharp knife to cut them into your desired-sized pieces.

And there you have it! Your very own homemade Gimbap, a delightful blend of flavours and textures. These colourful rolls make a perfect snack, lunch, or party appetizer, showcasing the art of Korean cuisine.

Gimbap is not only a treat for your taste buds but also a visual masterpiece. Enjoy your culinary adventure as you savour these delightful rolls, and don’t forget to share the love with your friends and family.
