INGREDIENTS

5 Large Carrots
2 Cups of Vegetable Broth
1 Can of Coconut Milk
3 tablespoons of Thai Red Curry Paste
1/2 Onion
1 Garlic Clove
100 g of Vermicelli Rice Noodles
1 Can (150g) of Chickpeas
1/2 Lime
Pinch of Salt and Pepper

METHOD

1. Begin by chopping the carrots into 2cm chunks and boiling them until tender. Once cooked, drain and set aside.

2. In a food processor, blend the cooked carrots, coconut milk, vegetable broth, salt, and pepper until a smooth consistency is achieved. Set aside this luscious carrot blend.

3. Prepare the vermicelli noodles by soaking them in hot water for 5 minutes and then draining. Keep them aside for later.

4. In a pan, sauté finely diced onion and garlic in olive oil over medium-high heat. Add the red curry paste and chickpeas, sautéing for an additional 1-2 minutes.

5. Incorporate the carrot blend and noodles into the pan. Reduce the heat to low-medium and cook for 5-10 minutes, stirring regularly until the soup achieves a delectable thickness. Remove from heat, wait for 2-3 minutes, then squeeze in the fresh juice from half a lime and stir.

6. Serve the Thai-Style Carrot Soup hot, optionally garnishing with coconut cream, fresh herbs, lime zest, or crushed nuts for an extra layer of texture and flavour.

With a harmonious blend of Thai spices, velvety coconut milk, and the earthy sweetness of carrots, this Thai-Style Carrot Soup is a testament to the magic that unfolds when simplicity meets culinary artistry. Whether you’re seeking comfort or a culinary adventure, this soup promises to be a delightful addition to your repertoire. Indulge in its rich flavors and let every spoonful transport you to the vibrant streets of Thailand.
