Indulge in the rich, velvety goodness of this Dark Chocolate Mousse, a dessert that perfectly balances deep chocolate flavours with a light, airy texture. This recipe uses simple ingredients to create a luxurious treat that will impress any chocolate lover. The mousse is topped with fresh berries for a burst of freshness, making it an ideal dessert for any occasion.

INGREDIENTS
3 eggs
125g of dark chocolate (at least 70% cocoa)
10g of unsalted butter
1/2 cup of heavy cream
3 tablespoons of powdered sugar
Fresh berries for decorating
METHOD
1. Prepare the Eggs:
Separate the eggs while they are still cold. Place the whites in a large bowl and the yolks in a small bowl.
Whisk the yolks thoroughly until they are smooth.
2. Melt the Chocolate:
Break the dark chocolate into pieces and place them in a microwave-safe bowl with the butter.
Melt the chocolate and butter in 30-second bursts in the microwave, stirring between each burst until the mixture is smooth. Set aside to cool slightly.
3. Whip the Cream:
In a separate bowl, beat the heavy cream until stiff peaks form. Be careful not to over-whip the cream as it can turn into butter.
4. Beat the Egg Whites:
Add the powdered sugar to the egg whites.
Beat the egg whites until firm peaks form.
5. Combine the Mixtures:
Fold the whisked egg yolks into the whipped cream using a rubber spatula. It’s okay if there are some streaks.
Pour the slightly cooled, but still runny chocolate into the cream and yolk mixture. The chocolate should be warm (at least 35°C/95°F; ideally 40°C/104°F). If the chocolate has cooled too much and thickened, microwave it in 5-second bursts until it is runny again.
Fold the chocolate into the cream mixture with a maximum of 8 folds. Some streaks are fine at this stage.
6. Incorporate the Egg Whites:
Add one-quarter of the beaten egg whites to the chocolate mixture. Fold in gently until incorporated, using a “smearing” motion with the spatula to blend any lumps. Aim for about 10 folds.
Pour the chocolate mixture into the remaining egg whites. Fold through gently until the mixture is fully incorporated and no white lumps remain, aiming for a maximum of 12 folds.
7. Chill the Mousse:
Divide the mixture evenly between 4 small glasses or pots.
Refrigerate for at least 6 hours, preferably overnight, to allow the mousse to set and the flavours to develop.
8. Serve:
Just before serving, garnish each mousse with fresh berries or any other preferred toppings. The burst of fresh fruit complements the rich chocolate beautifully.
Final Thoughts:
This Decadent Dark Chocolate Mousse is a celebration of rich, indulgent flavours with a light, airy texture. Perfect for dinner parties, romantic dinners, or simply treating yourself, this dessert is sure to impress. The fresh berries add a delightful contrast, making each bite a harmonious blend of deep chocolate and refreshing fruit.
