Roasted Green Beans

Green beans are an excellent, nutrient-packed side dish, and when roasted with a touch of olive oil and lemon juice, they become a deliciously crispy and tangy delight. This simple recipe highlights the fresh flavours of green beans with minimal effort and maximum taste, making it perfect for a weeknight dinner or a casual gathering.

INGREDIENTS

200 g of green beans
1 tablespoon of olive oil
1 teaspoon of lemon juice
1/2 teaspoon of salt
A pinch of ground black pepper

METHOD

1. Preheat the oven:

Set your oven to 200°C (about 400°F) to ensure it’s hot and ready when it’s time to roast.

2. Prepare the green beans:

Start by washing and drying the green beans thoroughly. Trim both ends of the beans to remove any tough or stringy parts.

3. Season the beans:

Spread the green beans evenly in an oven-safe pan or tray. Drizzle them with the olive oil and lemon juice. Sprinkle with salt and a pinch of ground black pepper for a well-balanced flavour. Use your hands or a spoon to toss everything together, ensuring the beans are evenly coated.

4. Bake:

Place the tray in the preheated oven and roast for 15-20 minutes. You’ll know the beans are ready when they have a nice golden-brown colour and a slight crisp to them.

5. Serve:

Once roasted, transfer the beans to a serving dish. You can garnish them with additional lemon zest or a sprinkle of sea salt for an extra pop of flavour.

This recipe is a simple yet flavourful way to enjoy green beans. The lemon juice brightens up the dish, while the roasting process brings out a wonderful caramelized flavour. Perfect as a side to your favourite main course or even enjoyed as a light snack!
