INGREDIENTS
½ litre chicken or vegetable stock
3 potatoes, peeled and cubed
¼ head of cabbage, thinly sliced
1 carrot, peeled and grated
1 medium yellow onion, finely chopped
1 small yellow bell pepper, deseeded and chopped
1 teaspoon tomato paste
2 tablespoons olive oil
Salt to taste
Sour cream (for serving)
Fresh dill, chopped (for garnishing)
METHOD
1. Prepare the Ingredients:
Begin by peeling and cubing the potatoes. Thinly slice the cabbage. Peel and grate the carrot, finely chop the onion, and deseed and chop the yellow bell pepper.
2. Simmer the Potatoes:
In a large pot, bring the chicken or vegetable stock to a gentle simmer. Add the cubed potatoes and cook over medium-low heat for about 20 minutes, or until the potatoes are tender.
3. Sauté the Vegetables:
While the potatoes are simmering, heat 2 tablespoons of olive oil in a pan over medium heat. Add the chopped onion, grated carrot, and chopped bell pepper to the pan. Sauté for 5-7 minutes, until the vegetables begin to turn golden.
4. Add Tomato Paste:
Stir in 1 teaspoon of tomato paste with the sautéed vegetables, mixing thoroughly until well combined. Cook for an additional 1-2 minutes to blend the flavours.
5. Combine and Simmer:
After the potatoes have simmered for 20 minutes, add the sautéed vegetables and thinly sliced cabbage to the pot. Continue to simmer the soup for another 20 minutes, allowing the flavours to meld together.
6. Season to Taste:
Adjust the seasoning by adding salt to taste. If you prefer a deeper flavor, feel free to add more seasoning or a pinch of black pepper.
7. Serve and Garnish:
Ladle the soup into bowls and top each serving with a spoonful of sour cream and a sprinkle of freshly chopped dill. The creamy tang of the sour cream pairs perfectly with the hearty vegetables.
This cabbage and potato soup is not only delicious but also easy to make with simple, everyday ingredients. Whether you’re serving it as a light lunch or a comforting dinner, it’s sure to bring warmth and satisfaction to the table. Enjoy!
