Mujadara – A Comforting Middle Eastern Classic

Mujadara is a humble, hearty, and utterly satisfying dish that hails from the Levantine region. At its core, it’s a simple combination of lentils, rice, and deeply caramelized onions—but don’t let that simplicity fool you. This dish is rich in both flavour and history, often served as a staple across Middle Eastern homes. The slow-cooked onions bring a touch of sweetness, while the lentils and rice make for a nourishing and comforting base. A cool cucumber-mint yoghurt sauce adds balance, freshness, and a creamy contrast to each bite.

Whether you’re exploring more plant-based meals or just craving something cozy and nourishing, Mujadara is a timeless choice that never disappoints.

INGREDIENTS

For the Mujadara:
2 cups of lentils
1 cup of rice
3 onions
1 teaspoon of salt
1 teaspoon of cumin
2 tablespoons of neutral oil
A pinch of sugar

For the Yoghurt Sauce:
4 tablespoons of Greek yoghurt
1/3 of a cucumber
1 tablespoon of fresh mint, chopped
A pinch of salt

METHOD

1. Cook the Lentils & Rice

Begin by boiling the lentils according to package instructions. Once they’re nearly cooked, add the soaked rice to the pot and finish boiling together until both are tender.

2. Season & Steam

Turn off the heat, add salt and cumin, stir to combine, cover with a lid and let it sit for about 5 minutes. This allows the flavours to meld and the rice to steam to perfection.

3. Caramelize the Onions

While the lentils and rice rest, prepare the onions. Peel and slice them into thin half-moons. Heat neutral oil in a pan over medium heat, then sauté the onions until they begin to turn golden. Add a pinch of sugar and continue to stir until fully caramelized—deep brown and fragrant.

4. Make the Yoghurt Sauce

Dice the cucumber finely and combine with Greek yoghurt, chopped mint, and a pinch of salt. Mix well and refrigerate until ready to serve.

5. Assemble & Serve

Spoon the lentil-rice mixture onto a serving dish. Generously spread the caramelized onions on top. Serve alongside the refreshing yoghurt sauce.

This dish is best enjoyed warm or at room temperature, and it’s even better the next day. Mujadara is a comforting, wholesome meal that’s easy to make with pantry staples—and one that deserves a spot in your regular rotation.
