Smoky Chorizo Tacos with Fresh Pico de Gallo and Avocado Mash

Few things hit the spot like tacos — especially when they’re filled with smoky sausage, creamy avocado, and a zesty pico de gallo. This recipe is a perfect quick-fix meal that packs bold flavour, vibrant texture, and beautiful colour. Using a smoked Chorizo sausage from Ramo Dūmas, this dish brings together elements of Mexican-inspired freshness with a Lithuanian ingredient twist.

These tacos are perfect for a casual dinner, weekend lunch, or as a fun sharing plate for gatherings. Every bite offers the crisp warmth of toasted tortillas, the richness of mashed avocado, the brightness of fresh salsa, and the deep, smoky notes of pan-fried Chorizo.

INGREDIENTS

1 smoked Chorizo sausage (I used one from Ramo Dūmas)
3 tortillas
1 ripe avocado
1 tomato
1 small red onion
½ green chili pepper
A handful of fresh coriander
½ lime
Salt, to taste

METHOD

1. Prepare the Pico de Gallo:

Wash all your vegetables. Finely dice the tomato (you can deseed it, but I like mine juicy). Finely dice the red onion and deseeded green chili pepper. Remove the stems from the coriander and chop the leaves. Combine all ingredients in a small bowl, add a pinch of salt and squeeze over fresh lime juice. Mix well and let sit to develop flavour.

2. Mash the Avocado:

Cut and scoop the avocado into a bowl. Use a fork to mash it to your desired texture — smooth or chunky — and set it aside.

3. Cook the Chorizo:

Slice the smoked Chorizo sausage into bite-sized pieces. In a dry pan over medium heat, fry the slices until nicely caramelized on both sides. Remove from the pan.

4. Warm the Tortillas:

In the same pan, warm the tortillas for about 20–30 seconds on each side until soft and pliable. Fold them in half while still warm to help shape the tacos.

5. Assemble the Tacos:

Spread mashed avocado inside each folded tortilla. Spoon over a generous amount of pico de gallo. Finally, top with pieces of caramelized Chorizo.

Serving Suggestion

Serve immediately while warm. These tacos are best enjoyed fresh with an optional squeeze of extra lime juice and perhaps a dollop of sour cream or your favourite hot sauce on the side.

Whether you’re cooking for yourself or entertaining guests, these smoky Chorizo tacos are a no-fuss crowd-pleaser that comes together in minutes. The contrast of creamy, zesty, fresh, and smoky makes each bite deeply satisfying.
