Apple Filled Cookies
These are the kind of cookies that feel like a quiet afternoon — soft light, something warm in the oven, and a hint of citrus in the air. Buttery, tender, and gently filled with sweet apple, they’re simple in the best way… the kind you keep reaching for without even noticing.

Ingredients
- 170g butter, softened
- 120g sugar
- Zest of 1 lemon
- 2 medium egg yolks
- 1 medium egg
- 330g all-purpose flour
- 1 tbsp flour (for dusting)
- 1 large apple, peeled, cored, and finely chopped
Method
In a large bowl, beat the butter, sugar, and lemon zest using a handheld mixer until creamy, pale, and lightly fluffy — about 3–4 minutes.
Add the egg yolks one at a time, mixing well after each addition. Then add the whole egg and continue mixing until smooth and creamy, about 2 minutes.
Add in the flour and gently mix using a spatula until combined. The dough will be soft and slightly sticky — dust it with 1 tablespoon of flour and gently bring it together into a ball, without overworking.
Wrap the dough in cling film and let it rest in the refrigerator for at least 1 hour.
Once chilled, transfer the dough onto a lightly floured surface. Divide into tablespoon-sized pieces.
Shape each piece into a ball, then flatten slightly. Place a small spoonful of finely chopped apple in the center.
Fold the dough over the filling, sealing it gently, then roll lightly between your hands into a ball.
Place the cookies onto a parchment-lined baking tray.
Bake at 180°C for 15–18 minutes, until the edges are just lightly golden.
Let them cool on a wire rack, then finish with a dusting of powdered sugar.
