Lemon Poppy Seed Cookies

You just bake them because you can. And honestly — because life feels better when it smells like lemon and sugar.

Ingredients:
280 g all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt
3 tablespoons poppy seeds
200 g granulated sugar
50 g brown sugar
1 tablespoon lemon zest
170 g unsalted butter, room temperature
1 large egg
1 teaspoon lemon juice
½ teaspoon vanilla extract
Method:
Place the flour, baking powder, salt, and poppy seeds in a medium bowl and whisk together.
Add granulated sugar to another bowl, then lemon zest.
Rub the zest into the sugar for about a minute — until the sugar turns pale yellow and smells like sunshine.
Add brown sugar and butter. Mix on low for 30 seconds, then on medium for 3 minutes until creamy.
Add the egg, lemon juice, and vanilla extract, and mix until smooth.
Add the dry ingredients and mix until the flour disappears.
Refrigerate for at least 1 hour (or up to 3 days).
Preheat the oven to 180°C.
Scoop dough into balls (about 2 tablespoons each), arrange on a parchment-lined tray, and bake for 10–14 minutes, until edges are lightly golden.
Cool for a few minutes, then transfer to a rack.
