Breakfast Toast
With Green Asparagus, Eggs and Ham
Summer continues so does my summerhouse food theme. My summerhouse is small, I don’t have lots of pans and pots there… So, when planning a meal, I must keep in mind only one pan or one pot dishes.
That morning I was craving to have hot sandwich. Luckily, I had bread for toasting (but no toaster :D), some eggs, ham and greens. The flavour was amazing thus I share this recipe with you.

INGREDIENTS
1 slice of bread
2 tablespoons of butter
1 egg
2 spears of green asparagus
25 g of turkey ham
10 g of spring onion
Pinch of salt
METHOD
1. Finely chop spring onions and ham.
2. Wash asparagus and trim the hardened bottoms of their stems.
3. Cut asparagus in halves.
4. Melt 1 tablespoon of butter in a pan and add slice of bread.
5. Fry bread on a medium heat for 1-2 minutes and then flip. Fry for another 1-2 minutes.
6. Melt 1 tablespoon of butter on a pan and add asparagus.
7. Fry for 2 minutes on a medium heat then add spring onions and ham. Fry for another 4 minutes.
