Spinach Waffles with Smoked Fish

Ingredients
For the waffles
- 100 g all-purpose flour
- 75 ml milk
- 45 g butter
- 35 g sugar
- 1 egg
- 1/3 tsp baking powder
- 1 handful spinach
- 1 tbsp water
For the topping
- 1 small smoked seabass
- 1 tsp capers
- 2 tbsp mayonnaise
- 1 tsp pink peppercorns
Method
Preheat your waffle maker.
In a bowl, beat the egg with sugar until pale and lightly fluffy.
Add the melted butter and milk, mixing gently until smooth.
Sift in the flour and baking powder, then stir until combined.
Blend the spinach with water until smooth and fold it into the batter.
Cook the waffles until golden and cooked through.
Top the warm waffles with smoked seabass, small spoonfuls of mayonnaise, capers, and crushed pink peppercorns before serving.
