INGRIDIENTS
500 g of beef goulash
1 l of water
6 medium-sized potatoes
1 red bell pepper
1/2 baby zucchini
1 onion
2 garlic cloves
1 tablespoon of tomato paste
1 teaspoon of universal spices
2 small, dried chili peppers (optional)
Salt and pepper to taste
Sour cream and chives for serving
METHOD
1️. In a large pot, bring water to a boil and add the beef goulash. Simmer for 1.5-2 hours until the beef becomes tender and flavourful.
2️. While the beef is cooking, prepare the vegetables. Peel and cut the potatoes into cubes, slice the bell pepper and zucchini, chop the onion, and mince the garlic.
3️. In a separate pan, sauté the vegetables (except potatoes) until they become slightly tender and fragrant.
4️. Once the beef is ready, add the cubed potatoes, universal spices, and braise for 20 minutes until the potatoes are cooked through.
5️. Next, add the sautéed vegetables, dried chili peppers (if using), and braise for an additional 10 minutes to allow the flavours to meld together.
6️. Stir in the tomato paste and season with salt and pepper to taste. Let the stew simmer for another 10 minutes to thicken.
7️. Serve this hearty beef stew hot, garnished with a dollop of sour cream and a sprinkle of fresh chives.
