Nepali-Style Spicy Fried Eggs

Nepal, known for its rich landscapes and diverse culture, offers a cuisine that’s as varied as its terrain, blending flavours from neighbouring India, Tibet, and China with unique local traditions. Nepali cuisine is vibrant, spicy, and rooted in fresh, local ingredients that are often simple yet full of depth. Spicy fried eggs, also known as “Anda Fry” or “Nepali Egg Fry,” is a popular street-style snack enjoyed for its satisfying combination of heat, warmth, and aromatic spices. The eggs are hard-boiled, then fried with garlic and spices for an irresistibly flavourful dish. This recipe captures the essence of Nepali street food in a quick, easy, and flavourful way.

INGREDIENTS

5 hard-boiled eggs
2 tablespoons neutral oil (such as vegetable or canola oil)
2 garlic cloves, crushed
1/2 teaspoon ground cumin
1/2 teaspoon paprika powder
1/2 teaspoon turmeric powder
1/2 teaspoon chili flakes (adjust to taste)
1/4 teaspoon salt
1 tablespoon chopped coriander, for garnish

METHOD

1. Prepare the Eggs:

Peel your hard-boiled eggs, ensuring they’re dry for the frying process.

2. Fry the Eggs:

Heat 2 tablespoons of oil in a pan over medium-high heat. When the oil is hot, increase the heat to high and add the peeled eggs. Fry the eggs, stirring constantly, until they develop a golden crust on all sides.

3. Add Garlic:

Reduce the heat to medium, add the crushed garlic to the pan, and stir-fry for about a minute until the garlic releases its aroma.

4. Add the Spices:

Sprinkle in the ground cumin, paprika powder, turmeric powder, chili flakes, and salt. Stir well to coat the eggs evenly with spices and continue to cook for 2 minutes, letting the flavours infuse.

5. Serve:

Transfer the spicy fried eggs to a serving dish. Garnish with freshly chopped coriander for an extra pop of colour and flavour.

6. Serving Suggestions:

Enjoy these Nepali-style spicy fried eggs on their own as a snack or appetizer, or pair them with rice, roti, or naan for a complete meal. The eggs are also delicious alongside yogurt to balance the heat.

Notes:

This dish can be adjusted to your preferred spice level, so feel free to increase or reduce the chili flakes. The quick cooking time and aromatic spices make this a perfect go-to for a spicy treat with an authentic Nepali flavour twist!
