Personal Pavlovas
When it comes to elegant desserts that leave a lasting impression, nothing compares to the timeless charm of Pavlovas. Named after the Russian ballerina Anna Pavlova, these meringue-based desserts are as light and airy as a dancer’s pirouette. Today, I’m excited to share a recipe for Personal Pavlovas that not only looks stunning but is also surprisingly simple to make. Perfect for any occasion, these individual desserts will surely become a favourite at your table.

INGREDIENTS
For the Meringue:
5 eggs, at room temperature
225g of sugar
1 1/2 teaspoon of vinegar
1 1/2 teaspoon of starch (cornstarch or potato starch)
1 teaspoon of vanilla sugar
For the Cream:
180 ml of whipping cream
180 g of Philadelphia cheese
3 tablespoons of caster sugar
For the Toppings:
Berries (your choice of strawberries, raspberries, blueberries, etc.)
Fresh mint leaves
METHOD
1. Prepare the Meringue:
Separate the egg whites and add them to a large, dry whisking bowl (avoid plastic bowls, as they can retain grease which interferes with beating the eggs).
Beat the egg whites until they begin to foam.
Gradually add the sugar, one spoon at a time, while continuing to beat the mixture until it reaches a silky texture and forms stiff peaks.
Add the vinegar, vanilla sugar, and starch. Mix everything together for about one minute until fully incorporated.
2. Shape the Meringues:
Preheat your oven to 120°C (250°F).
Line a baking sheet with parchment paper.
Spoon the meringue mixture onto the parchment paper, forming six individual circles. Create a slight indentation in the centre of each circle and make the sides higher to form a nest-like shape.
3. Bake the Meringues:
Bake in the preheated oven for 20 minutes.
Reduce the temperature to 100°C (210°F) and continue baking for an additional 2 hours.
After baking, turn off the oven but do not open the door. Allow the meringues to cool completely inside the oven, preferably overnight, to prevent them from cracking.
4. Prepare the Cream:
In a mixing bowl, combine the whipping cream, Philadelphia cheese, and caster sugar.
Beat the mixture until it reaches a smooth and thick consistency.
5. Assemble the Pavlovas:
Place each meringue on a serving plate.
Generously spoon the cream mixture onto the centre of each meringue.
Top with a variety of fresh berries and garnish with mint leaves.
Serving Suggestions
Personal Pavlovas are best enjoyed fresh, and their versatility allows you to experiment with different toppings. You can use seasonal fruits, chocolate shavings, or even a drizzle of fruit coulis to customize this dessert to your taste. Whether you’re hosting a dinner party or simply indulging in a sweet treat, these Pavlovas are sure to impress.
Tips for Success
Egg Whites: Ensure your egg whites are at room temperature before you begin. This helps them whip up better.
Gradual Sugar Addition: Adding sugar slowly is key to achieving the perfect meringue texture.
Cooling: Patience is crucial. Allowing the meringues to cool completely in the oven helps them maintain their structure and prevents cracks.
Enjoy the delicate crispiness of the meringue combined with the rich, creamy topping and the fresh burst of berries. These Personal Pavlovas are not just a dessert; they are an experience, bringing a touch of sophistication and a whole lot of deliciousness to your table.
