Slow-Roasted Pork Neck

INGREDIENTS
1 kg piece of pork neck
2 tablespoons olive oil
2 teaspoons fresh thyme leaves
1 teaspoon caraway seeds
2 garlic cloves, chopped
1 tablespoon tomato paste
1/2 cup white wine
1/2 cup chicken stock
Salt and pepper, to taste
METHOD
1. Prepare the Oven
Preheat your oven to 130°C (266°F).
2. Make the Seasoning Mixture
In a small bowl, mix together the olive oil, fresh thyme, caraway seeds, chopped garlic, and tomato paste. This mixture will help infuse the pork with a deep, herby flavour.
3. Season the Pork
With a sharp knife, make small incisions all over the pork neck to allow the seasoning to penetrate. Rub the seasoning mixture all over the pork, making sure to coat it well. Season generously with salt and pepper.
