History
Soup, a culinary cornerstone dating back to ancient civilizations, has evolved from a simple sustenance to an art form embraced across the globe. The roots of soup-making can be traced to the Neolithic age when our ancestors combined ingredients in pots over open fires. Over the centuries, different cultures have woven their unique flavours into this comforting dish, creating an immense diversity that mirrors the world’s culinary tapestry.
Population and Varieties
Soup transcends geographical boundaries, making it a beloved dish in virtually every culture. From the robust stews of Europe to the delicate broths of Asia, the world of soups is vast and varied. Popular varieties include classics like chicken noodle soup, minestrone, pho, and gazpacho, each telling a story of tradition and regional taste. The flexibility of soup allows for infinite creativity, catering to diverse palates and dietary preferences.
Nutrition
Beyond its comforting warmth, soup offers a nutritional powerhouse. Packed with vegetables, lean proteins, and whole grains, soups provide a well-rounded blend of vitamins, minerals, and antioxidants. The broth base, whether meat or vegetable, can contribute to hydration. Additionally, the slow cooking process allows nutrients to infuse into the liquid, enhancing the overall nutritional profile.
Interesting Facts
Soup has not only fed the hungry but also inspired cultural idioms and expressions. The phrase “stone soup” originates from a European folktale where villagers contribute ingredients to a communal pot, resulting in a hearty meal for all. Additionally, the renowned book “Soup: A Way of Life” by Barbara Kafka celebrates the universal appeal and cultural significance of this culinary classic.
Storage Information
To make the most of your soup, proper storage is crucial. Refrigerate leftover soup within two hours of cooking, ensuring it cools rapidly to prevent bacterial growth. For longer storage, freezing is an excellent option. Be sure to use airtight containers or freezer bags, leaving some space for expansion. Soups with cream or milk bases may require additional care during freezing.
Cooking Tips
Achieving a perfect bowl of soup involves a delicate dance of flavours and textures. Building layers of taste is key, starting with a well-crafted broth as the foundation. Fresh herbs, spices, and aromatic vegetables add depth, while careful seasoning throughout the cooking process enhances the final result. Experimenting with different textures, from chunky to smooth, can elevate the soup experience.

Cold beetroot soup, called Šaltibarščiai in Lithuanian, is a highlight of our national cuisine. While at first foreign people are afraid to try it because of a bright pink colour, after they do – always ask for more.
This soup is really refreshing and healthy, so it is perfect for hot weather days. I like to make it with pickled beetroots but if it is hard to find some in your country – boiled and grated ones work just fine.
Šaltibarščiai are usually served with potatoes on the side. I prefer oven baked wedges.
