INGREDIENTS

180 g of butter biscuits
60 g of unsalted butter
90 g of full-fat cream cheese
90 g of mascarpone
50 g of white chocolate
70 g of icing sugar
3 passion fruits, flesh scooped out (approx 60 g of flesh)

METHOD

1. Begin by transforming the butter biscuits into a fine crumb using a blender. Transfer the crumbs into a large bowl.

2. In a separate bowl, melt the unsalted butter in the microwave and pour it over the biscuit crumbs. Mix thoroughly until the mixture achieves the consistency of damp sand, clumping together slightly.

3. Press the biscuit mixture into loose-bottom tins, using a fork to create the base and shaping the sides with a combination of fork and fingers.

4. Preheat the oven to 180 degrees Celsius and bake the bases for 7-8 minutes. Allow them to cool completely, then refrigerate for 30 minutes.

5. Using an electric whisk, beat the cream cheese and mascarpone together until smooth. Add 30 g of sifted icing sugar and whisk briefly to combine.

6. Melt the white chocolate over steam, pour it into the cream cheese mixture, and whisk immediately to achieve a seamless blend.

7. Retrieve the chilled bases from the fridge and carefully spoon the white chocolate cheesecake filling onto them. Use a small palette knife to ensure a smooth, flat surface, reaching all edges and corners.

8. Return the tartlets to the fridge and allow them to chill for a minimum of 1 hour.

9. In a saucepan, combine the passion fruit flesh, seeds, and juice. Add 40 g of icing sugar and bring the mixture to a boil. Simmer for 3 minutes or until it thickens slightly. Set aside to cool for 5 minutes, creating a runny gel-like consistency for the passion fruit syrup.

10. Take the mini cheesecakes out of the fridge, spoon the passion fruit syrup on top, and spread it evenly with a palette knife. Return the cheesecakes to the fridge for a final 30 minutes of chilling time.

Indulge in these mini delights, where the velvety white chocolate meets the vibrant zest of passion fruit, creating a harmonious blend of flavours that dance on your palate. A dessert that embodies elegance in every bite.
