INGREDIENTS

For the Dough:
2 1/3 cups all-purpose flour
1/2 cup water
2 teaspoons sugar
1 teaspoon salt
30 g fresh yeast (or 10 g dried yeast)
80 ml sunflower oil

For the Filling:
400 g mushrooms (forest or champignon)
1 onion
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
Salt and pepper to taste
2 tablespoons sunflower oil

For Deep Frying:
Sunflower oil

METHOD

1. Make the Filling:

Finely chop mushrooms and onions.

Preheat 2 tablespoons of sunflower oil in a pan.

Add mushrooms and onions to the pan, stirring for 10 minutes.

Incorporate dill and parsley, and season with salt and pepper to taste.

Mix and fry until the filling is done and aromatic.

2. Make the Dough:

In a bowl, combine yeast and water, allowing them to meld into a homogeneous mixture.

Incorporate sugar, salt, and 2 tablespoons of flour, stirring well. Allow the mixture to rest for 10 minutes.

Introduce sunflower oil, then gradually add the remaining flour while kneading. Initially, the dough may seem firm, but as you knead for 10 minutes, it will transform into a soft and elastic consistency.

Place the dough in a bowl, cover it, and let it rest in a warm place for 1 hour, allowing it to rise and develop its character.

3. Form the Rolls:

Roll out the dough slightly thicker than for dumplings.

Using a cup or cookie cutter, cut out circles from the dough.

Place a teaspoon of the savoury mushroom filling on one side of each circle.

Fold the dough over the filling, pressing the sides together. Form a decorative edge by “braiding” it, adding a touch of artistry to each roll.

4. Cook:

Deep fry the rolls until they attain a glorious golden brown hue over medium heat.

The sizzle and aroma will signal that your Lithuanian Christmas Eve Rolls with Mushroom Filling are ready to be enjoyed.
