Pan-Fried Smelt

Delicate, crispy, and full of nostalgia — smelt is one of those simple pleasures that reminds you how good the little things can be. Just flour, hot oil, and a squeeze of fresh lemon… and suddenly it tastes like winter by the Baltic Sea.


Ingredients

• 500 g smelt
• 4 tbsp all-purpose flour
• 1 tbsp corn starch
• Salt to taste
• Neutral oil for frying
• Fresh parsley, chopped
• Lemon wedges for serving


Method

Wash and pat dry the smelt.
Season lightly with salt.
Mix flour and cornstarch on a large plate.
Coat each fish well.
Heat oil in a pan over medium heat.
Pan-fry until beautifully golden and crisp.
Serve with chopped parsley and lemon wedges. Crispy perfection!
