INGREDIENTS
2 boneless, skinless chicken breasts
1 avocado, cut into bite-sized pieces
1/2 lime
1 romaine lettuce, chopped
10 cherry tomatoes, halved
1/2 can of black beans, drained and rinsed
1/2 can of corn, drained and rinsed
1 red onion, cut into half-moon slices
2 tablespoons of chopped fresh coriander
3 tablespoons of olive oil, divided
1 tablespoon of balsamic vinegar
2 tablespoons of Greek yogurt
1/2 teaspoon of smoked paprika
1/2 teaspoon of cumin
1 teaspoon of dried oregano
Salt and pepper to taste
METHOD
- Marinate the Chicken:
Start by washing and cutting the chicken breasts into bite-sized pieces. In a medium bowl, combine the smoked paprika, cumin, dried oregano, salt, and pepper. Add the chicken pieces to the bowl and toss well to ensure they are fully coated with the spice mixture. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes to allow the flavours to meld.
- Cook the Chicken:
Preheat 1 tablespoon of olive oil in a pan over medium heat. Add the marinated chicken pieces and fry for 7-8 minutes, or until they are golden brown and cooked through. The chicken should reach an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the pan and set aside.
- Prepare the Salad:
In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, black beans, corn, and red onion slices. Drizzle with the remaining 2 tablespoons of olive oil and the balsamic vinegar. Toss the salad well to ensure all the ingredients are evenly coated with the dressing.
- Assemble and Serve:
Transfer the tossed salad to a serving plate. Arrange the cooked chicken pieces on top of the salad. Add the avocado pieces and squeeze the juice of half a lime over the top for a fresh, tangy kick. Sprinkle the chopped fresh coriander over the salad.
- Finish with Greek Yogurt:
Finally, drizzle the Greek yogurt over the salad. The creamy yogurt adds a delightful contrast to the smoky, spicy chicken and the crisp, fresh vegetables.
This Mexican Chicken Salad with Avocado and Greek Yogurt Dressing is a fantastic option for a light lunch or a healthy dinner. The combination of marinated chicken, fresh vegetables, and creamy avocado ensures every bite is packed with flavour. Plus, the addition of Greek yogurt provides a creamy dressing alternative that’s lower in fat than traditional dressings. Enjoy this salad as a complete meal or as a standout side dish at your next gathering. Bon appétit!
