INGREDIENTS
1 pork hock
6 medium-sized onions
10 garlic cloves
1.5 litres of dark beer
Fresh thyme
1 tablespoon of paprika powder
2 teaspoons of cayenne pepper powder
2 teaspoons of garlic powder
5 bay leaves
1 teaspoon of black pepper grains
Salt and pepper to taste
Plain flour
METHOD
1. Marinating the Pork:
Begin by washing the pork hock thoroughly.
Finely chop 2 onions and 4 garlic cloves.
Place the pork hock in a large bowl, and sprinkle paprika powder, cayenne pepper powder, garlic powder, salt, and pepper over it.
Add the chopped garlic and onions, rubbing the marinade into the meat.
Cover the bowl and let it marinate overnight for a depth of flavours.
2. Braising the Pork:
Wash the remaining onions and garlic, adding them to a large pot.
Wash several branches of fresh thyme and add them to the pot.
Include bay leaves, black pepper grains, and approximately a tablespoon of salt to the pot.
Add the marinated pork hock along with all the garlic and onions to the pot.
Pour in the dark beer, bringing it to a simmer.
Simmer for 1 hour, then turn the pork hock around and simmer for an additional hour.
3. Roasting and Making Gravy:
Preheat the oven to 200 degrees Celsius.
Remove the pork hock from the pot and score the skin with a sharp knife.
Place parchment paper on a baking tray and arrange the pork hock on top.
Roast the pork hock in the oven until the skin turns crispy.
While roasting, make the gravy by draining some beer from the pot into a separate saucepan. Bring it to a boil for 3-4 minutes, then gradually add flour until it thickens.
4. Serve and Enjoy:
Once the pork hock is ready, serve it with mashed potatoes and the flavourful beer gravy.
