Chicken Breast with Apples, Onion & Thyme
There’s something about the smell of apples and onions in butter — it feels like home, even if you’re nowhere near it.
The sizzle, the sweetness, the thyme releasing its perfume — it’s a quiet kind of magic.
And then, there’s the chicken — golden, soft, soaking up all those cozy flavors, as if it knows exactly what it’s doing.
It’s the kind of dish that doesn’t need a special occasion.
It becomes one.
Simple, honest, and unexpectedly elegant — a reminder that comfort doesn’t have to be heavy.
Just a pan, a few apples, and a little bit of thyme.
And dinner suddenly feels… poetic.

Ingredients:
2 chicken breasts
1 apple
1 small onion
2 tablespoons of butter
1 tablespoon of olive oil
A few sprigs of fresh thyme
Salt and pepper to taste
1 teaspoon of Dijon mustard (optional, for a bit of depth)
Method:
Slice the apple and onion.
Add butter and olive oil to a pan and melt together over medium heat.
Add chicken breasts and season with salt and pepper.
Fry on both sides until golden.
Add onion, apple slices, and thyme to the pan.
Cook for another few minutes, spooning the juices over the chicken.
Add a small spoon of Dijon mustard if desired and swirl it into the sauce.
Serve warm, topped with caramelized apples and onion.
