Crunchy Garden Bowl with Honey Vinaigrette
Some days, all you really crave is something fresh… something alive. That kind of bowl that feels like you’re doing something good for yourself without even trying. It’s the crunch of fresh vegetables, the sweetness of honey, the little richness from avocado… everything just coming together in the simplest way. I love meals like this — no pressure, no complicated steps… just real ingredients, real flavors. And somehow, it always tastes better when you take a moment to slow down and actually enjoy it. This is the kind of food that resets you. Light, colorful, and exactly what you didn’t know you needed.

Ingredients
1 gherkin
1/2 carrot
1/2 avocado
6 cherry tomatoes
1/4 green bell pepper
1 cup Romanesco broccoli florets
2 tablespoons roasted walnuts
1 tablespoon parmesan shavings
For the dressing:
1 tablespoon olive oil
1 teaspoon honey
1 teaspoon apple cider vinegar
Salt and pepper to taste
Method
Wash and prepare all your vegetables. Cut the gherkin, carrot, avocado, cherry tomatoes, and green bell pepper into bite-sized pieces. Break the Romanesco broccoli into small florets.
In a small bowl, whisk together olive oil, honey, apple cider vinegar, salt, and pepper until the dressing is smooth and slightly glossy.
Arrange all the vegetables on a serving plate, layering them naturally for a fresh, abundant look.
Drizzle the honey vinaigrette over the salad.
Finish with roasted walnuts and parmesan shavings on top.
Serve immediately and enjoy the contrast of fresh crunch, creamy avocado, and sweet-savory dressing.
