Lemon & Herb Salmon Skewers
Perfectly juicy, flavourful, and incredibly easy to make—these Lemon & Herb Salmon Skewers bring fresh, zesty flavours straight to your table. A quick marinade with garlic, lemon, and aromatic herbs enhances the richness of the salmon, making this a simple yet elegant dish for any occasion.
INGREDIENTS
600 g salmon fillet
½ lemon (juice + zest)
2 tbsp olive oil
3 garlic cloves, minced
1 tsp Provençal herbs
Salt and pepper, to taste
METHOD
1. Prepare the salmon
Remove the skin from the salmon fillet and cut it into large cubes.
2. Make the marinade
In a bowl, combine the minced garlic, lemon juice, grated lemon zest, olive oil, Provençal herbs, salt, and pepper. Mix well.
3. Marinate the salmon
Add the salmon cubes to the marinade and toss to coat evenly. Let it marinate for about an hour for the best flavour. If short on time, you can cook it immediately.
4. Soak the skewers
While the salmon marinates, soak wooden skewers in water to prevent burning during cooking.
5. Assemble the skewers
Thread the salmon cubes onto the skewers, ensuring they are evenly spaced. Place them over a baking dish, allowing the salmon to “hover” above the bottom by resting the skewer ends on the edges of the dish.
6. Bake
Preheat the oven to 200°C (392°F). Bake the skewers for 3-4 minutes, then flip them and bake for another 4-5 minutes, or until the salmon is cooked through and slightly golden.
Serve immediately with your favourite sides roasted vegetables, fresh salad, or a creamy yogurt sauce. Enjoy!
