Oven Baked Chicken Parts with Vegetables
After the weekend BBQ party, I had some vegetable leftovers (you can find veggie skewers recipe that I have posted earlier) that I had to use. After inspecting the freezer, I was lucky to find various chicken parts that were left from my previous dishes – wings, drumsticks, fillet. I thought it would be a great idea to combine everything and bake in the oven. The result was finger-licking-good thus I am sharing the recipe with you!

INGRIDIENTS
500 g of chicken parts
5 small potatoes
1/2 baby zucchini
1 small bell pepper
5 large champignons
2 medium sized red onions
2 tablespoons of olive oil
1 teaspoon of thyme
1 teaspoon of dried coriander
1 teaspoon of dried dill
Salt, pepper
METHOD
1. Marinate chicken parts as you like for at least an hour (better overnight).
2. Cut all the vegetables into medium sized pieces.
3. Put vegetables into baking pan, drizzle olive oil, sprinkle all the herbs, salt ant pepper.
4. Put chicken parts on top.
5. Bake in the oven. 200 degrees, around 60 minutes.
