Perfect Steak with Chimichurri
There are few things more satisfying than a beautifully seared steak, golden on the outside and tender within—especially when it’s topped with a bold, herby chimichurri. This dish brings together rich, buttery steak and the fresh, zesty punch of chimichurri sauce for a pairing that feels indulgent and elevated, yet is surprisingly easy to prepare at home.
Whether you’re cooking for a dinner guest or simply treating yourself, this recipe is a foolproof way to impress. And yes—my homemade chimichurri recipe is waiting for you on the blog if you need it!
INGREDIENTS
1 good-quality steak (your preferred cut)
2 tablespoons of butter (for cooking)
1 teaspoon of butter (for resting)
3 garlic cloves, smashed
3 sprigs of fresh rosemary
Salt and pepper, to taste
2 tablespoons of chimichurri (see my blog for the recipe)
METHOD
1. Prep the steak
Wash the steak gently and pat it completely dry using a paper towel. This helps create that perfect sear.
2. Infuse the butter
Preheat a skillet over medium heat. Add the 2 tablespoons of butter, garlic cloves, and rosemary. Stir gently and allow the butter to infuse with the fragrant oils from the herbs and garlic.
3. Sear the steak
Raise the heat to medium-high. Place the steak into the pan and sear for 3 minutes, spooning the infused butter over it every minute to lock in moisture and flavour.
4. Flip and baste again
Lower the heat slightly to medium, flip the steak, and cook for another 3 minutes—again spooning butter over it each minute.
5. Rest the meat
Remove the steak from the pan and place it on a cutting board. Season generously with salt and pepper, add a small knob (1 tsp) of butter on top, and cover loosely with tin foil. Let it rest for 5 minutes to ensure juiciness.
6. Slice and serve
Cut the steak into strips against the grain and transfer to a serving plate. Finish with a generous spoonful of fresh chimichurri over the top.
This steak is bold, buttery, and bursting with flavour—especially when paired with that fresh chimichurri sauce. For sides, think roasted potatoes, grilled corn, or a crisp green salad.
