INGREDIENTS

2 big sweet potatoes
2 tablespoons of olive oil
Salt, pepper to taste

Topping:
2 garlic cloves
1 tablespoon of olive oil
400 g of canned white beans
70 g of baby spinach

Sauce:
2 tablespoons of tahini
1 teaspoon of chili oil
Fresh juice of 1/4 of lime

METHOD

1. Preheat and Prepare:

Preheat your oven to a cozy 200 degrees Celsius.

Begin by giving the sweet potatoes a good wash and scrub, ensuring they’re ready to absorb the flavours.

2. Quarter and Massage:

Quarter the sweet potatoes, creating bite-sized pieces. Drizzle with olive oil and massage it in, ensuring each piece is coated in the luscious goodness.

Sprinkle with salt and pepper, infusing the sweet potatoes with a perfect balance of seasoning.

3. Bake to Perfection:

Arrange the seasoned sweet potatoes on a baking tray lined with parchment paper. Bake for approximately 30 minutes or until they reach a tender, melt-in-the-mouth consistency.

4. Create the Topping:

Finely chop the garlic cloves.

In a pan, heat olive oil over medium heat, then sauté the garlic for 30 seconds.

Add the canned white beans, frying and mixing for a couple of minutes to heat them through.

Introduce the baby spinach, cooking until it loses its shape but retains its vibrant green hue.

Season with salt and pepper to taste.

5. Craft the Sauce:

In a small bowl, whisk together tahini, chili oil, and the fresh juice of 1/4 lime. This zesty sauce adds a layer of brightness to the dish.

6. Assemble with Flair:

Arrange the perfectly baked sweet potatoes on a plate, sprinkling them with a touch of salt and pepper.

Crown them with the flavourful white bean and baby spinach topping.

Drizzle the tahini sauce for a final flourish of taste and elegance.

For visual appeal, consider adding chopped parsley and sesame seeds.

This Sweet Potato Medley with White Bean Spinach Topping is not just a meal; it’s a celebration of wholesome ingredients coming together in a symphony of flavours. Share it with loved ones or savour it in solitude – either way, prepare for a journey of culinary delight that embraces both nourishment and indulgence.
