1 teaspoon of sesame oil
1 tablespoon of Gochujang paste
500 ml of water
50 ml of cream
100 g of shredded mozzarella cheese
1 Bok Choy
30 g of Enoki mushrooms
1 tablespoon of chopped spring onion
1 teaspoon of sesame seeds

METHOD

1. In a large, deeper skillet, bring water to a boil.

2. Add bouillon powder and mix well until it melts, creating a flavourful base.

3. Add the Tteokbokki (Rice Cakes) to the skillet, close it with a lid, and simmer on low heat for 2 minutes to soften the rice cakes.

4. Now, it’s time to add the bold flavours. Stir in the Gochujang paste, soy sauce, and sesame oil, ensuring all the rice cakes are coated. Close the skillet with the lid and simmer on low heat for an additional 3 minutes to allow the flavours to meld together.

5. Next, add the cream to create a luscious and creamy texture. Mix well, then introduce the Enoki mushrooms (after removing their roots and tearing them into smaller batches) and the Bok Choy leaves. Close the lid and let everything simmer for 3 minutes until the vegetables are tender.

6. For the final touch, sprinkle the shredded mozzarella cheese over the dish. Close the lid and continue simmering until the cheese melts, creating a delightful gooey topping.

7. To add a pop of freshness and visual appeal, garnish with chopped spring onions and sesame seeds.
