INGREDIENTS
5 tablespoons of hummus
4 small beetroots
2 carrots
2 potatoes
10 small brown champignons
6 garlic cloves
2 tablespoons of olive oil
2 tablespoons of balsamic vinegar
2 tablespoons of brown sugar
Salt and pepper to taste
Fresh thyme to garnish
Pine nuts to garnish
METHOD
1. Preheat and Prepare:
Preheat your oven to 200°C (392°F). In a large bowl, combine the beetroots (peeled and halved), carrots (peeled and cut lengthwise), potatoes (peeled and cut into wedges), champignons (washed thoroughly), and garlic cloves (peeled). Drizzle with olive oil, and season with salt and pepper. Toss well to ensure every vegetable is evenly coated.
2. Roasting Magic:
Spread the prepared vegetables in a large roasting pan, making sure they’re distributed evenly. Roast in the preheated oven for about 40 minutes, or until the vegetables start to caramelize and turn tender.
3. Sweet Glaze:
While the vegetables roast, it’s time to create a sweet and tangy glaze. In a medium bowl, combine the balsamic vinegar and brown sugar, stirring until the sugar dissolves.
4. Glaze and Roast Again:
Once the initial roasting is complete, remove the vegetables from the oven. Pour the balsamic glaze mixture over the vegetables, making sure to coat them thoroughly. Return the pan to the oven and roast for an additional 15 minutes, or until the vegetables are perfectly tender and glistening with the glaze.
5. Crunchy Finish:
In the last culinary flourish, roast a handful of pine nuts until they’re delightfully crunchy and golden.
6. Assembly:
Now, it’s time for the artistic presentation. Take your favourite hummus and generously spread it on a serving plate.
7. Arrange and Garnish:
Arrange the gloriously roasted vegetables on top of the hummus canvas. Sprinkle with fresh thyme leaves and the roasted pine nuts.
This recipe is more than just a dish; it’s a masterpiece. The earthy sweetness of the roasted vegetables perfectly complements the creamy hummus, while the balsamic glaze adds a touch of elegance to the ensemble.
