INGREDIENTS
4 boneless pork chops or veal cutlets
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs

METHOD
1. Prepare the Cutlets
Place each pork chop or veal cutlet between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the cutlets until they are about 1/4 inch thick.

In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. Season the flour with salt and pepper to taste.
