Today, we’re setting sail with a recipe that marries tradition with innovation, resulting in a delightful dish that will tantalize your taste buds: Gochujang Chicken Dumplings.

INGREDIENTS

Gochujang Wrappers:
130 g of flour
1 teaspoon of Gochujang paste
60 ml of boiling water
1/4 teaspoon of salt

Filling:
200 g of minced chicken
200 g of Napa cabbage
1 teaspoon of grated ginger
1 tablespoon of chopped spring onions
2 tablespoons of soy sauce
1/2 teaspoon of sesame oil
White pepper, salt to taste

Sauce:
1 tablespoon of soy sauce
1 tablespoon of finely chopped spring onions
1/4 teaspoon of sesame oil
1 teaspoon of sesame seeds
1 garlic clove, finely chopped

METHOD

1. Prepare the Gochujang Wrappers:

In a large bowl, combine salt with flour. In a separate small bowl, thoroughly mix Gochujang paste and boiling water. Add the Gochujang mixture to the flour and gently combine. Knead the mixture by hand for approximately 5 minutes until it forms a smooth dough. Shape the dough into a ball, wrap it in food wrap, and let it rest for an hour.

2. Prepare the Filling:

While the dough rests, prepare the filling by combining minced chicken, Napa cabbage, grated ginger, chopped spring onions, soy sauce, sesame oil, white pepper, and salt in a bowl. Mix well until all ingredients are evenly incorporated.

3. Assembly:

After the dough has rested, divide it into 12 equal pieces. Roll each piece into a flat circle. To assemble the dumplings, place a wrapper on your palm and spoon 1 teaspoon of filling onto the centre. Be mindful not to overfill. Moisten the outer edges of the wrapper with water using your index finger. Fold the dumpling to form a half-moon shape, pressing and sealing tightly in the middle.

4. Cooking:

Bring a pot of water to a boil. Gently drop the dumplings into the boiling water and cook for a few minutes until they float to the top. Using a strainer, carefully remove the dumplings from the water and transfer them to a plate.

5. Prepare the Sauce:

In a small bowl, combine soy sauce, chopped spring onions, sesame oil, sesame seeds, and finely chopped garlic. Mix well to create a flavourful dipping sauce.

6. Serve and Enjoy:

Arrange the cooked dumplings on a serving platter and serve hot with the prepared dipping sauce on the side. These Gochujang Chicken Dumplings are perfect for sharing with friends and family as a tasty appetizer or as part of a satisfying meal.

Embark on a culinary adventure and experience the bold flavours of Gochujang with these delectable dumplings. Enjoy the fusion of tradition and innovation in every savoury bite!
