Honey Mustard Pork Tenderloin with Roasted Potatoes

INGREDIENTS
1 kg pork tenderloin
1/4 cup honey
3 garlic cloves, minced
3 tablespoons mustard
3-4 sprigs of rosemary (leaves removed from stem and finely chopped)
3 tablespoons white wine
3 tablespoons extra-virgin olive oil
500 g potatoes (unpeeled, halved)
Salt and pepper to taste

METHOD
1. Preheat Oven:
Start by preheating your oven to 200°C (392°F).
2. Make the Glaze:
In a small bowl, whisk together the olive oil, honey, minced garlic, mustard, white wine, and chopped rosemary. Taste the mixture and season with salt and pepper as needed. This will be your glaze for the pork.
3. Prepare the Pork:
Wash and pat dry the pork tenderloin with paper towels. Season it lightly with salt and pepper. Using a brush, coat the pork tenderloin generously with the honey mustard glaze, ensuring it’s well-covered.
4. Arrange the Potatoes:
Drizzle a bit of olive oil into an oven-safe pan or baking dish. Arrange the halved potatoes cut-side down on the pan. Drizzle more olive oil over the potatoes and season them with salt and pepper.
5. Add the Pork:
Lay the glazed pork tenderloin lengthwise on top of the potatoes. Brush the pork once more with any remaining glaze.
6. Roast:
Place the pan in the oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches around 63°C (145°F).
7. Rest the Pork:
Once cooked, remove the pork tenderloin and transfer it to a carving board. Tent it with aluminium foil and let it rest for about 5 minutes while the potatoes continue roasting.
8. Finish Roasting the Potatoes:
Increase the oven temperature to 220°C (428°F) and return the pan with the potatoes to the oven. Roast the potatoes for an additional 5-10 minutes until they are golden brown and crispy.
9. Serve:
Remove the potatoes from the oven and transfer them to a serving platter. Slice the pork into medallions and arrange them over the potatoes. Pour any juices that accumulated while resting over the pork.
