Pan-Seared Lamb Shoulder with Lemon & Thyme
Sometimes the simplest recipes are the best. Just a good cut of lamb shoulder, butter, garlic, thyme, and a little lemon zest — that’s all it takes to make something special. Juicy, aromatic, and perfect alongside your favorite salad.

Ingredients:
- 1 piece of lamb shoulder
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 teaspoon lemon zest
- 2 garlic cloves
- A little bit of fresh thyme
- Salt & pepper to taste
Method:
- Add butter and olive oil to a pan and let the butter melt.
- Smash garlic cloves and add them to the pan. Fry for 30 seconds to release aroma.
- Add the lamb shoulder. Fry for 2 minutes on each side, basting with the melted butter and oil.
- Halfway through, sprinkle salt, pepper, lemon zest, and add thyme.
- Once golden on the outside and juicy inside, remove from the pan.
- Serve immediately with your favorite salad.
