Pirate’s Eye (Elevated Version)
This childhood favourite just got a serious upgrade.
You know the one—egg in toast? Now imagine it on rye, fried golden, topped with avocado, fresh herbs, balsamic pearls and a hint of piri piri. Fancy? Yes. Easy? Still yes.

Ingredients (1 serving):
1 slice of rye bread
1 egg
Neutral oil for frying
Garnishing:
Rucola
Halved cherry tomatoes
Cubed avocado (drizzled with lime juice)
Thinly sliced red onion
Balsamic caviar
Fresh basil
Salt & pepper
Piri piri
Olive oil
Method:
Cut a circle out in the middle of the slice of rye bread.
Preheat a bit of oil in a pan over medium heat.
Fry the bread on one side for 2–3 minutes until golden.
Flip it over and gently crack the egg into the hole.
Cover with a lid, reduce the heat slightly, and fry for 3–4 minutes.
Flip it once more and fry for 1 more minute.
Garnish to your liking: rucola, tomatoes, avocado with lime, red onion, balsamic pearls, fresh basil.
Season with salt, pepper, piri piri, and a drizzle of olive oil.
