Slow-Braised Beef Cheeks in Red Wine
There’s something deeply comforting about a dish that simmers away, filling the kitchen with rich aromas and anticipation. Beef cheeks, when cooked slowly, transform into tender morsels that melt in your mouth, absorbing the deep flavours of red wine and herbs. This recipe is a testament to the magic of slow cooking—a humble cut elevated to something truly special.

Ingredients
2 beef cheeks (approximately 800g), sinew removed
8 shallots, peeled and halved
2 garlic cloves, finely sliced
60g unsalted butter
1 bunch of fresh thyme
350ml quality red wine
Optional: 30g dark chocolate (minimum 80% cocoa), finely grated
750ml beef stock
Salt and freshly ground black pepper
Instructions
1. Preparation:
Preheat your oven to 140°C (275°F). Using a sharp knife, carefully remove any sinew from the beef cheeks.
2. Searing the Meat:
In a large, ovenproof casserole dish, melt half of the butter over medium heat. Add the beef cheeks and sear them until browned on all sides. Once browned, remove them from the dish and set aside.
3. Building the Base:
In the same dish, add the shallots and cook for 8–10 minutes until they begin to caramelize. Stir in the sliced garlic and thyme leaves, cooking for an additional 2 minutes to release their aromas.
4. Deglazing:
Return the beef cheeks to the dish. Pour in the red wine, bringing it to a boil. Allow it to simmer for about 5 minutes, reducing by half. If using, stir in the grated dark chocolate until melted, adding a subtle depth to the sauce.
5. Braising:
Pour in enough beef stock to cover the meat. Season with salt and pepper. Bring the mixture back to a gentle boil, then cover the dish with a tight-fitting lid or foil. Transfer to the preheated oven and braise for 4 to 4½ hours, or until the beef cheeks are tender and yielding.
6. Finishing the Sauce:
Once cooked, remove the beef cheeks from the dish and set aside. Place the dish over high heat on the stovetop and reduce the sauce until it thickens to your desired consistency. Taste and adjust seasoning as needed. Return the beef cheeks to the sauce, spooning it over to glaze them beautifully.
Serve these luscious beef cheeks with your choice of sides—perhaps creamy mashed potatoes or a root vegetable purée—to soak up the rich, velvety sauce.
This dish is perfect for a cozy dinner, offering deep flavours that belie its simple preparation. The optional addition of dark chocolate adds a luxurious touch, enhancing the richness of the red wine sauce. Enjoy this comforting classic that’s sure to become a favourite in your repertoire.
