INGREDIENTS
1 portion of spaghettini pasta
1 cup of cubed pork meat
1 cup of shredded cabbage
1/2 carrot, thinly sliced
1 garlic clove, minced
1 tablespoon of neutral oil
2 tablespoons of soy sauce
1 teaspoon of hoisin sauce (plus extra for garnish)
1/2 teaspoon of chili oil
1/4 lime, juice
1 tablespoon of spring onion, chopped
1 tablespoon of salted peanuts, crushed
Fresh coriander, to taste
METHOD
1. Cook the Pasta
Prepare the spaghettini according to package instructions until al dente. Drain and set aside.
2. Stir-Fry the Pork
Heat 1 tablespoon of neutral oil in a large pan or wok over medium-high heat. Add the cubed pork, stir-frying until it turns golden and is cooked through, about 4-5 minutes.
3. Add Vegetables
Add the minced garlic, sliced carrot, and shredded cabbage to the pan with the pork. Stir-fry for 2 more minutes until the vegetables begin to soften but still retain some crunch.
4. Incorporate Flavors
Pour in the soy sauce, hoisin sauce, and chili oil. Squeeze the juice from the quarter lime over the mixture, stirring well to combine all the flavours.
5. Combine with Pasta
Add the cooked spaghettini to the pan, mixing thoroughly to ensure each strand is coated with the sauce and ingredients.
6. Plate and Garnish
Transfer the spaghettini mixture to a serving bowl. Garnish with chopped spring onion, fresh coriander, crushed peanuts, and a wedge of lime for an extra burst of freshness. Drizzle a bit more hoisin sauce over the top if desired.
Tips for Perfect Stir-Fried Pasta
Use Thin Pasta: Spaghettini’s light texture works perfectly here, but you could also use angel hair for an even more delicate bite.
Adjust Heat Level: Add more or less chili oil depending on your spice preference. For a more intense kick, try adding fresh chili slices as a garnish.
Add Fresh Herbs Last: To preserve the fresh flavours of coriander and spring onion, add them right before serving.
This Spicy Pork and Cabbage Spaghettini is a quick, flavourful dish that’s sure to become a weeknight favourite. With its vibrant flavours and satisfying textures, it’s comfort food with a deliciously creative twist! Enjoy!
