Chicken Wraps
Mexican Style
Yesterday we had a flight from Vilnius to Berlin. Flight was at 12 so before we reached home in Berlin, we had been eating only yoghurt for breakfast and sandwiches on the train. This meant that I had to head to the store and make nourishing yet quick and easy food.
Over time I have found out that finger food (the one you can eat with hands, not cutlery) is always a good choice. So, the first thing that came to my mind was chicken fajitas but made in my own way (I rarely follow the recipes because I like to add my own twist to the dish). I quickly marinated the chicken, then fried it. I have also fried bell peppers and red onion, made some guacamole and cut tortillas into pieces. Served everything in one plate. I suggest eating this dish in this order: take a piece of tortilla, put a teaspoon of guacamole, chicken, veggies and coriander on it. Wrap and take a bite.
By the way, as it is the weekend and you may have a BBQ party, I may add that this can also be made on a grill. I once had a big party at my summerhouse and made a huge amount of this dish. It was gone in no time.
