This recipe is close to my heart, as it reminds me of the simple, comforting flavours I loved as a child. Quick and easy, it’s perfect for busy weeknights when you want something homemade without all the fuss. The combination of feta, spinach, and olives brings a Mediterranean flair, while the crispy pizza base ties everything together beautifully.

½ can of crushed tomatoes
12 cherry tomatoes, halved
1 cup chopped baby spinach
85g crumbled feta cheese
½ thinly sliced red onion
¼ cup chopped pitted black olives
1 teaspoon dried oregano
Salt, to taste

METHOD

1. Preheat the oven to 200°C (400°F) to get it ready for baking.

2. Line a baking tray with parchment paper to prevent sticking.

3. Place the readymade pizza base on the tray and spread the crushed tomatoes evenly across the top.

4. Season the tomatoes with salt and dried oregano to enhance the flavours.

5. Distribute the chopped baby spinach over the base, followed by the halved cherry tomatoes, sliced red onion, and black olives.

6. Sprinkle the crumbled feta cheese on top to add a savoury and tangy kick.

7. Bake for 12-14 minutes, or until the crust is golden and the toppings are slightly crisp.

8. Let the pizza cool for about 5 minutes before slicing and serving.

This pizza is a delightful mix of fresh veggies and Mediterranean flavours, making it a comforting yet flavourful meal that’s sure to please!
